• 8th International Congress on Pigments in Food 2016, Cluj-Napoca, Romania, June 28th – July 1st 2016. The aim of the congress is to offer good opportunities for scientists to show their advances in scientific and technological topics, related to pigments in food, from their chemical characterization, to (bio)technological production and formulation, stability, metabolism and finally to focus on health effects and benefits. • The 2016 Gordon Research Conference on Carotenoids (see link) and its associated Gordon Research Seminar (see links: https://www.grc.org/grs.aspx and https://www.grc.org/programs.aspx?id=15522 ) occurred at Renaissance Tuscany Il Ciocco, in Lucca (Barga), Italy located in the Tuscany region of Italy between May 21- 27, 2016 (GRS was held on May 21 and the GRC followed May 22-27). The popular GRS is specifically a one day event that focuses on the accomplishments and specific needs of students and young investigators.
  
• 3rd International Macular Carotenoids Conference 8-10 July 2015, Downing College, Cambridge, United Kingdom. It was a conference for macular carotenoid researchers, exploring up-to-date and evidence-based hypotheses and the supporting research data into the role of the macular carotenoids in age-related macular degeneration (AMD), vision, and cognitive function.

• Pigments in Food, Quimper, France, June 14-17, 2004. This Conference was aimed at bringing together scientists, clinicians, physicians and food industry managers from all over the world currently working on different aspects of pigments in food. All topics regarding pigments in food will be considered. Important trends include production of natural food colourings, new processes for the recovery of natural pigments, formulation of synthetic pigments, Maillard products, pigments from microalgae, microbial production of pigments for food use (fermentation), health effects of pigments, bioactivities, nutraceutical or functional pigments, safety of colorants, analytical techniques applied to pigments, formulation, designing of food containing pigments, sensory analysis on colorants and coloured food, effect of food processes on pigments, regulatory requirements and marketing issues.
